INGREDIENTS
- 200 g salmon
- Zest and juice of 1 orange
- 100 g couscous (dry)
- 1 teaspoon chili
- 1 cucumber (approx. 280 g)
- 1 small red onion
- 1 tablespoon white wine vinegar
- Salt
- Pepper
- 180 ml water (boiling)
INSTRUCTIONS
- 1Preheat the oven to 200 °C and line a baking sheet with parchment paper.
- 2Place the salmon on the baking sheet, drizzle with orange juice, season with salt and pepper, and bake for 10–12 minutes at 190 °C.
- 3Meanwhile, prepare the couscous: Place it in a medium bowl, add chili, orange zest and the remaining juice, salt, and pepper. Pour boiling water over it, cover, and let it sit for 10 minutes.
- 4In a smaller bowl, slice the cucumber into half-moons and the onion into thin slices, and drizzle with vinegar. Season with salt and pepper and let it sit for 10 minutes. Then mix with the couscous and serve with the salmon.
