INGREDIENTS
- 1 tablespoon olive oil
- 3 medium shallots (sliced)
- 2 cloves garlic (coarsely chopped)
- 200 g whole grain long-grain rice, dry
- 1 large carrot (approx. 80 g)
- 150 g quality chicken ham (or pre-cooked chicken breast)
- 100 g frozen peas
- Salt
- Pepper
- 1 liter water
INSTRUCTIONS
- 1In a larger pot, heat olive oil over medium heat. Add onion and garlic and sauté for 1–2 minutes. Then add rice, sauté for another 1–2 minutes, and pour in water. Season with salt and pepper, cover with a lid, and cook for 20–30 minutes until the rice is done. Add water as needed.
- 2Meanwhile, coarsely grate the carrot and dice the ham.
- 3After the rice is cooked, stir in the peas, ham, and carrot, reduce the heat to low, and let it cook for another 2 minutes.
