INGREDIENTS

  • 200 g whole wheat penne pasta, dry
  • 1 tablespoon olive oil
  • 80 g yellow onion (cut into larger cubes)
  • 3 cloves garlic (finely chopped)
  • 100 g fresh tomatoes (cut into larger cubes)
  • 250 g tuna in own juice (drained)
  • 240 g canned chopped tomatoes
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 20 g Parmesan (finely grated)
  • 1 handful fresh chives (finely chopped)
  • 100 g low-fat mozzarella (torn)
  • Salt
  • Pepper

INSTRUCTIONS

    In a large pot, bring salted water to a boil, add the pasta, and cook for 15–16 minutes on high heat. After cooking, drain.

    Meanwhile, heat a large pan with olive oil over medium heat, add the onion, garlic, and tomatoes, and sauté for 2–3 minutes. Then reduce the heat to low, add the tuna, canned tomatoes, lemon juice, salt, pepper, oregano, and Parmesan, and cook for about 10 minutes, stirring occasionally.

    After cooking, remove from heat, add the pasta, and mix. Divide the mixture into individual portions, add chives and mozzarella, and serve.
