INGREDIENTS

  • 300 g of any whole grain pasta, dry
  • 1 medium yellow onion (approx. 70 g)
  • 3 cloves of garlic
  • 1 large zucchini (approx. 300 g)
  • 3 tablespoons of olive oil
  • 40 g of Parmesan
  • 1 handful of fresh basil
  • Salt
  • Pepper
  • 200 ml of water
  • 100 ml of cooking cream (12% fat)

INSTRUCTIONS

    First, take a large pot, pour in a sufficient amount of water for cooking the pasta, add salt, and bring to a boil over high heat. Once the water starts boiling, add the pasta to the pot and cook for 17–18 minutes over medium heat.

    Meanwhile, prepare the zucchini sauce: Peel and finely chop the onion and garlic. Cut the zucchini into small cubes. Then take a large pan and heat olive oil in it over medium heat. Once the oil is hot, add the chopped onion, chopped garlic, and zucchini cubes to the pan and sauté for 4–5 minutes over medium heat. Then add water to the pan, season with salt and pepper, and cook for 7–8 minutes over medium heat.

    Drain the cooked pasta. Grate the Parmesan finely. Once the zucchini in the pan softens, transfer the mixture from the pan to a tall mixing container, add the cooking cream, grated Parmesan, and fresh basil, and blend everything until smooth with a hand blender. Pour the blended mixture back into the pan, add the drained pasta, and season with salt and pepper.

    Reheat the finished dish over low heat if necessary and serve.

Before serving, sprinkle each portion with finely grated Parmesan and garnish with a few basil leaves.
