INGREDIENTS

  • 1 large yellow onion (approx. 100 g)
  • 2 large zucchinis (approx. 600 g)
  • 1 large red bell pepper (approx. 120 g)
  • 1 package of cherry tomatoes (250 g)
  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon dried garlic
  • 250 g mozzarella
  • 1 handful fresh basil

INSTRUCTIONS

    First, start preheating the oven to 200–205 °C and prepare a baking dish measuring 25 cm × 30 cm. Peel the onion and cut it into larger cubes along with the zucchini and bell pepper. Cut the cherry tomatoes in half. Place the prepared vegetables into the baking dish, add oregano, 2 tablespoons of olive oil, dried garlic, salt, and pepper, and mix well.

    Place the baking dish in the oven preheated to 200–205 °C and bake for 20–25 minutes.

    After the time has elapsed, remove the baking dish from the oven, coarsely grate the mozzarella on top, and return the baking dish to the oven. Bake for 10–15 minutes at 200–205 °C.

    After baking, remove the baking dish from the oven and divide the dish into desired portions. Coarsely chop the basil, sprinkle it on each portion, and serve.
