SALAD INGREDIENTS
- 170 g of orzo
- 1 can of chickpeas
- Half a cucumber
- 50 g of feta
- 3 slices of bacon
- 1 red onion
- A handful of fresh mint
- A handful of fresh dill
- Oil for frying
DRESSING INGREDIENTS
- 30 g of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic
- 1 teaspoon of honey
- Salt
- Pepper
INSTRUCTIONS
- 1Pour the orzo into a small pot, add about 500 ml of water, and cook for about 10 minutes until soft, or according to the package instructions. Meanwhile, fry the bacon on both sides in a pan with a drop of oil until crispy. Then set it aside on a plate lined with a paper towel to absorb the excess fat.
- 2Drain the cooked orzo and transfer it to a salad bowl. Add the drained chickpeas, diced cucumber, coarsely chopped herbs, sliced red onion, crumbled feta, and the crispy bacon broken into smaller pieces.
- 3Finally, prepare the dressing – mix the oil with lemon juice, honey, pressed garlic, salt, and pepper. Pour it into the bowl and mix everything thoroughly to combine all the flavors.
