SALAD INGREDIENTS

  • 170 g of orzo
  • 1 can of chickpeas
  • Half a cucumber
  • 50 g of feta
  • 3 slices of bacon
  • 1 red onion
  • A handful of fresh mint
  • A handful of fresh dill
  • Oil for frying

DRESSING INGREDIENTS

  • 30 g of olive oil
  • 2 tablespoons of lemon juice
  • 1 clove of garlic
  • 1 teaspoon of honey
  • Salt
  • Pepper

INSTRUCTIONS

    Pour the orzo into a small pot, add about 500 ml of water, and cook for about 10 minutes until soft, or according to the package instructions. Meanwhile, fry the bacon on both sides in a pan with a drop of oil until crispy. Then set it aside on a plate lined with a paper towel to absorb the excess fat.

    Drain the cooked orzo and transfer it to a salad bowl. Add the drained chickpeas, diced cucumber, coarsely chopped herbs, sliced red onion, crumbled feta, and the crispy bacon broken into smaller pieces.

    Finally, prepare the dressing – mix the oil with lemon juice, honey, pressed garlic, salt, and pepper. Pour it into the bowl and mix everything thoroughly to combine all the flavors.
