INGREDIENTS

  • 2 bunches of mixed wild radishes
  • 8 eggs size M
  • 1 handful of wild garlic
  • 1 handful of radish microgreens
  • 8 tablespoons of yogurt mayonnaise
  • 250 g of frozen peas
  • Juice of 1 lemon
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS

    Pour the peas into boiling water and cook for 1-1.5 minutes. Then immediately cool them in ice water to stop the cooking process.

    Boil the eggs until hard-boiled – approximately 7 minutes depending on size. Peel the cooled eggs and cut them into cubes.

    Slice the radishes. Mix with peas, eggs, lemon juice, and yogurt mayonnaise.

    Season with salt and pepper. Stir in chopped wild garlic and serve sprinkled with pea microgreens.
