INGREDIENTS
- 2 bunches of mixed wild radishes
- 8 eggs size M
- 1 handful of wild garlic
- 1 handful of radish microgreens
- 8 tablespoons of yogurt mayonnaise
- 250 g of frozen peas
- Juice of 1 lemon
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1Pour the peas into boiling water and cook for 1-1.5 minutes. Then immediately cool them in ice water to stop the cooking process.
- 2Boil the eggs until hard-boiled – approximately 7 minutes depending on size. Peel the cooled eggs and cut them into cubes.
- 3Slice the radishes. Mix with peas, eggs, lemon juice, and yogurt mayonnaise.
- 4Season with salt and pepper. Stir in chopped wild garlic and serve sprinkled with pea microgreens.
