INGREDIENTS FOR THE DOUGH
- 200 g plain flour
- 100 g butter (cold, diced)
- 50 g sugar
- 2 eggs
- Zest of one lemon
- A pinch of salt

- 300 g rhubarb (peeled, cut into pieces)
- 200 g strawberries (quartered)
- 50 g sugar
- 1 vanilla sugar
INGREDIENTS FOR THE CRUMBLE
- 80 g plain flour
- 50 g sugar
- 40 g butter
- 50 g almond slices
INSTRUCTIONS
- 1First, prepare the dough. In a bowl, mix flour, sugar, salt, and lemon zest. Add cold butter and rub it with your fingers until it forms a coarse crumble. Add the eggs and quickly work the dough. Wrap it in foil and let it rest in the fridge, preferably overnight.
- 2Peel the rhubarb and cut it into smaller pieces, slice the strawberries. Mix them in a bowl with sugar and vanilla sugar. Rhubarb is very sour, so add sugar to taste if necessary.
- 3Mix flour, sugar, and butter – work into a crumble. Add almonds and mix.
- 4Roll out the chilled dough and transfer it to a pie form, prick the bottom with a fork. Pour in the fruit filling and sprinkle the crumble on top.
- 5Bake in a preheated oven at 180 °C for 40–45 minutes until the surface is golden.
