INGREDIENTS FOR THE DOUGH

  • 200 g plain flour
  • 100 g butter (cold, diced)
  • 50 g sugar
  • 2 eggs
  • Zest of one lemon
  • A pinch of salt

INGREDIENTS FOR THE FILLING

  • 300 g rhubarb (peeled, cut into pieces)
  • 200 g strawberries (quartered)
  • 50 g sugar
  • 1 vanilla sugar

INGREDIENTS FOR THE CRUMBLE

  • 80 g plain flour
  • 50 g sugar
  • 40 g butter
  • 50 g almond slices

INSTRUCTIONS

    First, prepare the dough. In a bowl, mix flour, sugar, salt, and lemon zest. Add cold butter and rub it with your fingers until it forms a coarse crumble. Add the eggs and quickly work the dough. Wrap it in foil and let it rest in the fridge, preferably overnight.

    Peel the rhubarb and cut it into smaller pieces, slice the strawberries. Mix them in a bowl with sugar and vanilla sugar. Rhubarb is very sour, so add sugar to taste if necessary.

    Mix flour, sugar, and butter – work into a crumble. Add almonds and mix.

    Roll out the chilled dough and transfer it to a pie form, prick the bottom with a fork. Pour in the fruit filling and sprinkle the crumble on top.

    Bake in a preheated oven at 180 °C for 40–45 minutes until the surface is golden.
