INGREDIENTS
- 500 g ground beef
- 100 g feta (crumbled)
- 1 small red onion (finely chopped)
- 3 cloves of garlic (finely minced)
- 4 pita breads
- 2–3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1 teaspoon cinnamon (optional, but recommended)
- 1 tablespoon tomato paste
- 1 teaspoon dried chili (or substitute with smoked paprika)
- Salt
- Pepper
INSTRUCTIONS
- 1In a bowl, mix the ground meat, crumbled feta, chopped red onion, garlic, and all the spices. Mix well, ideally by hand, to combine the flavors.
- 2Cut each pita bread in half (if they are thicker, cut into a pocket) and fill with a thin layer of the meat mixture – about 1–1.5 cm thick. A thin layer is important to ensure the meat cooks well.
- 3Lightly brush the filled pitas with olive oil on the outside so they grill nicely and become crispy.
- 4Grill on medium heat (or fry in a pan with a little oil) for 3–5 minutes on each side, until the meat is cooked and the pita is beautifully golden and crispy.
