  • 15 g capers
  • 15 g Parmesan
  • 10 g peeled shallot
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • a pinch of freshly ground pepper
  • 100 g beef tenderloin or aged sirloin

INSTRUCTIONS

    Cut the chilled meat into 3 mm cubes.

    Finely chop the anchovies, capers, Parmesan, and shallot. Mix them with the chopped meat, olive oil, salt, and pepper.
