INGREDIENTS

  • 1 onion
  • 1 clove of garlic
  • 1 tablespoon of olive oil
  • ½ teaspoon of dried oregano
  • 2 carrots
  • 2 potatoes
  • 250 g of dried split peas
  • 1 teaspoon of salt
  • ground black pepper to taste

    Peel and finely chop the onion and garlic. Clean the carrots and cut them into centimeter cubes, do the same with the potatoes. Sort and rinse the peas in a colander.

    Heat the oil in a pot and briefly and sharply fry the carrots. Once they start to take on golden hues in places, add the onion and garlic, a large pinch of salt, oregano, and optionally freshly ground pepper. Stir for a minute until the onion softens and everything becomes fragrant throughout the kitchen.

    Pour a liter of water over the soup base, add half of the peas, the potatoes, and bring to a boil. Let it simmer gently, uncovered or only half-covered, for about 30 minutes.

    Add the remaining peas to the soup and cook for another 30-40 minutes until all the peas in the soup are soft. Finally, season the soup again with salt and pepper.
