Fresh Sao Paolo sausage (Linguiça Artesanal de São Paulo) made from Přeštice Black Pied pork. The flavour is built on pepper and chilli, with a gentle sweetness from maple syrup.
The recipe came to Amaso via the head chef of the Brasileiro U Zelené žáby restaurant and was created from several tested variants. The result is a juicy sausage suitable for the pan and the grill.
Use
Pan-fry or grill slowly so it doesn’t split at high heat. As soon as the sausage starts to shrink in volume after briefly “puffing up”, remove it from the heat and let it rest for a moment.
