INGREDIENTS

  • 200 g plain flour
  • 200 ml semi-skimmed milk
  • 2 eggs
  • 200 g Gouda
  • 200 g ham
  • 1 baking powder with cream of tartar
  • 2 large shallots
  • 1 handful of fresh basil
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • A pinch of ground coriander
  • Salt

INSTRUCTIONS

    Preheat the oven to 180 degrees Celsius - bottom and top heat. Finely chop the shallot, dice the ham, and grate the cheese on a coarse grater. Heat olive oil in a pan and sauté the shallot until translucent, then add half of the ham and brown sugar. Let it caramelize quickly for a few minutes.

    In a larger bowl, mix the flour with the baking powder. Add milk, eggs, and mix well. Add the grated cheese, the other half of the ham, and chopped basil. Season with salt and ground coriander.

    Fill muffin paper cups to 3/4 full and sprinkle with caramelized shallot and ham. Bake in the oven for 35 - 40 minutes. Test with a skewer to see if the dough sticks.
Tip
The dough can also be baked in an oil-greased bundt cake pan. Bake for 45 - 50 minutes at 180 degrees Celsius.
