INGREDIENTS
- 2 whole grain baguettes
- 300 g chicken breasts
- 1 large bell pepper or 2 smaller ones
- 2 eggs
- Mixed leaf salad
- Salt
- Pepper
- Ketchup with reduced sugar or sweetened with stevia
- Olive oil
INSTRUCTIONS
- 1Cut the peppers in half and remove the seeds. Place them on a baking sheet skin side up, drizzle with olive oil, and bake for 20 minutes at 220 °C. Transfer the roasted peppers to a bowl and cover with plastic wrap. After five minutes, uncover and remove the skin from the peppers. Cut the peppers into smaller pieces.
- 2Season the chicken breasts with salt and pepper and sear them on a non-stick pan over medium heat. Cook for approximately 15 - 20 minutes, turning the meat several times. Once the breasts are cooked through, set them aside to rest. Then slice them into pieces.
- 3Boil the eggs until hard-boiled. This takes approximately 9 minutes. Cool the eggs in cold water and peel them.
- 4Assembly: Slice the baguettes and spread with ketchup. Add lettuce leaves, slices of chicken breast, sliced boiled eggs, and pieces of roasted peppers.
