INGREDIENTS FOR SLICES

  • 200 g grated coconut
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 100 g coconut oil (melted)

INGREDIENTS FOR GLAZE

  • 100 g dark chocolate (min. 70% cocoa)
  • 30 g coconut oil in solid state

INSTRUCTIONS

    Line a rectangular dish or smaller baking pan of size (20 × 30) cm with baking paper or cling film and prepare a larger bowl.

    Pour grated coconut and vanilla extract into the bowl. Add honey and melted coconut oil and mix thoroughly. Layer the resulting mixture into the prepared rectangular dish or baking pan and let it set in the freezer for 15–20 minutes. About 5 minutes before removing the set mixture from the freezer, melt the chocolate with coconut oil over a water bath.

    Prepare a pot and a glass or stainless steel bowl that can be inserted into the pot without touching its bottom. Pour a small amount of water into the pot and heat it so that the water is gently boiling. Break the chocolate into the bowl and add coconut oil. Once the water in the pot starts boiling, reduce the heat to a low setting, carefully insert the bowl into the pot, and let the mixture slowly melt while stirring constantly.

    Remove the chilled coconut mixture from the freezer, pour the melted chocolate over it, and let it set for 5 minutes.

    Cut the finished coconut mixture into desired portions and serve.
Tip
You can store the slices in the refrigerator, where they will last up to 3 months. Before serving, just let them thaw for at least 30 minutes at room temperature.
