Preparation method
Line a rectangular dish or a smaller baking pan measuring (20 × 30) cm with baking paper or cling film and prepare a large bowl.
Pour shredded coconut and vanilla extract into the bowl. Add honey and melted coconut oil and mix thoroughly. Layer the resulting mixture into the prepared rectangular dish or baking pan and place in the freezer to set for 15–20 minutes. Approximately 5 minutes before removing the set mixture from the freezer, melt the chocolate with coconut oil over a double boiler.
Prepare a pot and a glass or stainless steel bowl that can be placed into the pot without touching its bottom. Pour a small amount of water into the pot and heat it so that the water is gently simmering. Break the chocolate into the bowl and add coconut oil. Once the water in the pot starts to boil, reduce the heat to low, carefully place the bowl into the pot, and let the mixture melt slowly, stirring constantly.
Chef's tip
You can store the slices in the refrigerator, where they will last up to 3 months. Before serving, simply let them soften for at least 30 minutes at room temperature.
