- 400 g zucchini
- 1 teaspoon dried marjoram
- 2 cloves garlic (crushed)
- 100 g fine oats
- 2 tablespoons sunflower oil
- Salt

INSTRUCTIONS
- 1Wash the zucchini and grate it coarsely. Then remove the water from it by transferring it to a colander and pressing it with your palm. Place the prepared zucchini in a bowl and add eggs, marjoram, garlic, oats, sunflower oil, salt, and pepper, and mix everything thoroughly.
- 2Shape the resulting dough into pancakes with a diameter of about 7–9 cm. Then prepare a non-stick pan, heat olive oil in it, and fry the pancakes over medium heat for 2–3 minutes on each side.
SERVING TIP
- 1Serve the pancakes on their own or with a sour cream dip. Before serving, you can sprinkle them with finely chopped chives or fresh cress.
Tip
You can serve the pancakes either warm or cold. For a healthier version of the pancakes, bake them in a preheated oven for 17–19 minutes at 200–210 °C.
