INGREDIENTS
- 150 g whole wheat couscous (dry weight)
- 2 tablespoons fresh mint (coarsely chopped)
- 2 tablespoons fresh flat-leaf parsley (coarsely chopped)
- zest and juice of 1 medium lemon
- 1 tablespoon dried basil
- 450 g fresh salmon (3 fillets)
- Salt
- Pepper
- 70 ml cooking cream (12% fat)
INSTRUCTIONS
- 1First, preheat the oven to 180–185 °C and prepare a baking dish (20 cm × 30 cm).
- 2Prepare the couscous according to package instructions. Once ready, add mint, parsley, lemon zest and juice, basil, cream, salt, and pepper, mix, and transfer the entire content to the baking dish. Place the salmon fillets skin-side up on the couscous, put the baking dish into the preheated oven, and bake everything for 15–17 minutes at 180–185 °C.
Tip
You can add a lemon wedge to individual portions, or sprinkle them with any coarsely chopped fresh herb.
