INGREDIENTS

  • 150 g of whole grain couscous in dry state
  • 2 tablespoons of fresh mint (coarsely chopped)
  • 2 tablespoons of fresh flat-leaf parsley (coarsely chopped)
  • Zest and juice of 1 medium lemon
  • 1 tablespoon of dried basil
  • 450 g of fresh salmon (3 fillets)
  • Salt
  • Pepper
  • 70 ml of cooking cream (12% fat)

INSTRUCTIONS

    First, preheat the oven to 180–185 °C and prepare a baking dish (20 cm × 30 cm).

    Prepare the couscous according to the instructions on the package. Once it's ready, add mint, parsley, lemon zest and juice, basil, cream, salt, and pepper, mix well, and transfer the entire contents to the baking dish. Place the salmon fillets skin side up on the couscous, put the baking dish in the preheated oven, and bake everything for 15–17 minutes at 180–185 °C.
Tip
You can add a lemon wedge to individual servings or sprinkle them with any coarsely chopped fresh herb.
