INGREDIENTS

  • 450 g fresh salmon (3 fillets)
  • 150 g whole-grain couscous, dry
  • 2 tablespoons fresh flat-leaf parsley (coarsely chopped)
  • 70 ml cooking cream (12% fat)
  • zest and juice of 1 medium lemon
  • 1 tablespoon dried basil
  • 2 tablespoons fresh mint (coarsely chopped)
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 180–185 °C and prepare a baking dish (20 cm × 30 cm).

    Prepare the couscous according to the instructions on the package. Once it's ready, add mint, parsley, lemon zest and juice, basil, cream, salt, and pepper, mix well, and transfer the entire content to the baking dish. Place the salmon fillets skin-side up on top of the couscous, put the baking dish into the preheated oven, and bake everything for 15–17 minutes at 180–185 °C.
Tip
You can add a lemon wedge to individual portions, or sprinkle them with any coarsely chopped fresh herb.
