Preparation method
First, preheat the oven to 200–210 °C and prepare a baking dish (30 × 40) cm.
Wash, clean, salt, and pepper the chicken breasts. Heat 1 tablespoon of olive oil in a pan over medium heat. Once the oil is hot, place the chicken breasts in the pan and sear for 2–3 minutes on each side over medium heat. Remove the seared chicken breasts from the pan and set aside on a work surface.
Pour the second tablespoon of oil into the pan, add the finely chopped onion and sauté over medium heat for 2 minutes. Then reduce the heat to low, add the cane sugar, tomatoes, dried oregano, salt, and pepper, and simmer everything together for 3–4 minutes.
Chef's tip
You can sprinkle the Parmesan chicken with fresh basil before serving.
