INSTRUCTIONS
First, thoroughly heat up the grill.
Wash and dry the trout, then use a sharp knife to make 3 incisions on each side of the trout's body. Then, slice the lemon into 6 pieces and insert them into the abdominal cavity along with the thyme and rosemary. Finally, season the trout with salt and pepper and brush with olive oil. Place the prepared trout on the grill and sear for 4–5 minutes on each side. After turning the trout, close the grill lid and finish cooking the fish in the closed grill.
Now prepare the salad: Peel the avocado, cut it into smaller cubes, and place it in a bowl along with lemon zest and juice, basil, spring onion, salt, and pepper. Mix everything and serve with the grilled trout.
