INGREDIENTS
- 3 whole cleaned trout (3× approx. 300 g)
- 1 medium lemon (approx. 80 g)
- 3 sprigs of fresh thyme (dried can be used)
- 3 sprigs of fresh rosemary (dried can be used)
- 2 tablespoons of olive oil
- 400 g of avocado
- 10 g of fresh basil (finely chopped)
- 80 g of spring onion (coarsely chopped)
- Salt
- Pepper

INSTRUCTIONS
- 1First, heat up the grill thoroughly.
- 2Wash the trout, pat them dry, and make 3 slashes on each side of the trout using a sharp knife. Then slice the lemon into 6 slices and place them along with thyme and rosemary into the abdominal cavity. Finally, season the trout with salt and pepper and brush with olive oil. Place the prepared trout on the grill and sear for 4–5 minutes on each side. After turning the trout, cover the grill and finish cooking the fish in the closed grill.
- 3Now prepare the salad: Peel the avocado, cut it into smaller cubes, and place it in a bowl along with lemon zest and juice, basil, spring onion, salt, and pepper. Mix everything together and serve with the grilled trout.

- 1Trout can be served with grilled zucchini or a vegetable salad seasoned with olive oil and lemon juice.
