INGREDIENTS
- 1 peeled garlic clove
- 300 g snake cucumber
- 1 teaspoon of salt
- 200 g white Greek yogurt
- 1 tablespoon of finely chopped dill
- 1 tablespoon of lemon juice
- 3 tablespoons of extra virgin olive oil
Instructions
- 1Cut the garlic lengthwise and remove the tough germ, which you discard. Finely chop the garlic.
- 2Cut off both ends of the cucumber and slice it lengthwise. Scrape out the seeds with a spoon and coarsely grate the cucumber. Place it in a colander, set it over a bowl, and salt the cucumber. Stir and let stand for 10 minutes; the cucumber will release water.
- 3Squeeze out the drained cucumber, mix it in a bowl with yogurt, garlic, dill, lemon juice, and olive oil. Chill in the refrigerator for 2 hours. Stir before serving.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
