INGREDIENTS
- 180 g soba noodles
- 2 finely chopped shallots
- a piece of finely chopped ginger
- 2 cloves of finely chopped garlic
- 1/2 - 1 fresh chili
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 150 g tofu, diced into smaller cubes
- 1 carrot, julienned
- 150 g broccoli, cut into smaller pieces
- mung bean sprouts, or beans
- 1 chopped spring onion
- Pepper
SAUCE INGREDIENTS
- 6 tablespoons Soy Sauce
- 1 tablespoon lime juice or rice vinegar
- 1 - 2 tablespoons fish sauce (to taste)
- 1 small teaspoon cane sugar
GARNISH INGREDIENTS
- Sesame
INSTRUCTIONS
- 1Cook soba noodles according to package directions (approx. 2 - 3 minutes), then drain.
- 2Heat vegetable and sesame oil in a wok or pan.
- 3Add shallots, ginger, garlic, and chili. Let them become fragrant.
- 4Add broccoli, pour in half of the sauce, and cook for about 2 minutes.
- 5Add tofu, soba noodles, carrots, and the rest of the sauce, then mix.
- 6Finally, add spring onion.
- 7Mix everything, season, pepper, and sprinkle with sesame seeds.
