FLAVORED MAYONNAISE
- 80 g mayonnaise
- 1 teaspoon soy sauce
- 1⁄2 tablespoon Sriracha chili sauce
- 2 teaspoons lemon juice
SALAD
- 100 g iceberg lettuce
- 6 mint leaves
- 2 tablespoons finely chopped fresh coriander
- 15 g chopped unsalted peanuts
- 10 g finely chopped shallot
- 10 g finely chopped red onion
SANDWICH
- 2 boneless chicken thighs with skin
- 2 teaspoons salt
- 2 pinches freshly ground pepper
- 2 tablespoons vegetable oil for frying the meat
- 4 buns (kaiser rolls)
- 1 tablespoon softened butter
INSTRUCTIONS FOR FLAVORED MAYONNAISE
- 1Mix all the ingredients in a bowl and place in the refrigerator.
INSTRUCTIONS FOR SALAD
- 1Cut the iceberg lettuce and mint leaves into fine strips and mix with the other ingredients in a bowl.
INSTRUCTIONS FOR SANDWICH
- 1Preheat the oven to 180°C.
- 2Season the meat with salt and pepper on both sides. Heat oil in a pan over medium heat and cook the meat skin-side down for 3 minutes. Turn the meat and cook for 1 minute. Place the cooked meat in the preheated oven to finish cooking for 6 minutes.
- 3Remove the cooked meat from the oven onto a plate and let it rest for 5 minutes. Then cut each piece of meat in half.
- 4Slice the buns lengthwise, spread butter on the cut surface, and toast on a medium-hot pan until golden. Spread flavored mayonnaise on the toasted side of the buns. Place a quarter of the meat and a quarter of the salad on the bottom half of the bun and cover with the top half.
