INGREDIENTS
- 2 onions
- 4 cloves of garlic
- 2 packs of smoked tofu
- 40 g of tomato purée
- 160 ml of coconut milk
- 1 teaspoon of curry paste
- 1 teaspoon of soy sauce
- Fresh Thai basil
- 1 chili pepper
- Olive oil
- Salt
- 500 g of marble or Hokkaido pumpkin

INSTRUCTIONS
- 1Preheat the oven to 200°C. Wash the pumpkin (peel the marble pumpkin), cut it in half and scoop out the seeds. Cut it into 1.5 cm strips, place them on a baking tray, drizzle with olive oil, and bake for 15 minutes.
- 2Slice the onion into strips and the garlic into slices, and sauté them in a pan with 1 teaspoon of olive oil. Add the tofu cut into cubes and fry for a few minutes. Add the tomato purée and curry paste to the pan. Sauté for a minute, then pour in 200 ml of water and coconut milk. Finally, add the roasted pumpkin cut into cubes. Season with soy sauce and salt.
- 3Serve with rice.
