  • 350 g cherries (can be frozen)
  • 100 g granulated sugar
  • 2 teaspoons potato starch
  • 250 g mascarpone
  • 300 ml whipping cream
  • seeds from half a vanilla pod
  • 50 g powdered sugar
  • ¼ teaspoon sea salt

    Cut the washed cherries in half, pit them, and remove the stems. Mix them with granulated sugar and starch, and bake them in a baking dish for 40 minutes in an oven preheated to 200°C. Let the baked cherries cool in the refrigerator until the next day.

    Mix the mascarpone well with the cream, powdered sugar, salt, and vanilla. Let the mixture cool in the refrigerator until the next day. The next day, pour the mixture into an ice cream maker. Follow the instructions for the ice cream maker. Briefly mix the chilled baked cherries into the finished ice cream using the ice cream maker. Transfer the mixed ice cream into a sealable container and place it in the freezer. Allow the ice cream to soften for at least 15 minutes before serving.

    You can also make the ice cream without an ice cream maker. Place the prepared chilled mixture in the freezer. Every 30 minutes, whisk it well until it is sufficiently frozen, and finally, mix in the baked cherries.
