INGREDIENTS
- 150 g granulated sugar
- 1 kg pears
- 1 small sprig of fresh rosemary
- 2 tablespoons vodka
- Grated zest and juice of one lemon
INSTRUCTIONS
- 1Peel the pears, remove the cores, and cut them into smaller pieces. Mix the sugar with water in a saucepan, bring to a boil, and cook for about 2 minutes until the sugar is completely dissolved. Add the pears, finely chopped rosemary, and lemon zest, and cook for 5 minutes until the pears start to break down slightly. Stir the lemon juice into the cooked pears, let the mixture cool slightly, and blend it until smooth. If you want the sorbet to be completely smooth, pass the pear puree through a fine sieve. Stir the vodka into the puree and let it chill in the refrigerator until the next day.
- 2The next day, pour the pear puree into an ice cream maker. Continue making the sorbet according to the ice cream maker's instructions.
Tip
If you don't have an ice cream maker, achieve the same effect by placing the mixture in the freezer and stirring it well every half hour.
