HERMELÍN
- 4 Hermelíns
FILLING
- 2 cloves of garlic, finely chopped
- 2 inches of ginger, finely chopped
- 1 small onion, finely chopped
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- A pinch of chilli
- 1 teaspoon of garam masala
BRINE
- Pepper
- Bay leaf
- Coarsely ground salt
- Red onion, sliced
- Chilli peppers
- Oil
INSTRUCTIONS
- 1Mix the ingredients for the filling and fry them in a pan.
- 2Halve the Hermelíns and fill them with the resulting mixture.
- 3Prepare the brine by mixing all the ingredients together.
- 4Place the filled, already joined Hermelíns into the brine and let them rest.
Tip
You can also use Sichuan pepper (Tibetan yerma) in the brine.
