INGREDIENTS
- 1× head of cauliflower
- 20 g solid coconut oil (can use olive oil or ghee)
- 1 clove of garlic (crushed)
- 2 tablespoons tomato paste
- ½ teaspoon dried chilli
- 1 teaspoon dried rosemary
- 100 g canned coconut milk
- Salt

INSTRUCTIONS
- 1Divide the cauliflower into florets and wash.
- 2Heat coconut oil in a pan over medium heat.
- 3Add the cauliflower florets and sauté for at least 20 minutes over medium heat.
- 4In the last minute, stir in a crushed clove of garlic.
- 5Add tomato paste, chilli, and rosemary and sauté for 2 minutes over medium heat.
- 6Pour in coconut milk and let it simmer for another 5 minutes.
- 7Salt to taste.
Tip
Serve on its own or with rice or pasta. You can garnish the finished dish with a few leaves of fresh parsley.
