INGREDIENTS FOR THE BASE

  • 2× carrot (large)
  • 2× medium banana + 2x medium banana for glaze
  • 2× medium-sized apple
  • 250 g fine oats
  • 4 tablespoons Dutch cocoa + 4 tablespoons for glaze
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut oil (solid state) + for greasing the tin
  • 2 teaspoons baking powder
  • 100 ml water
  • Grated coconut (for sprinkling the tin)

INSTRUCTIONS

    Preheat the oven to 180 °C.

    Clean the carrots, grate them finely, and squeeze out the excess juice.

    Peel the bananas, remove the cores from the apples. Blend both and mix together.

    Blend the oats into flour, add all the ingredients for the base, and mix them into a dough.

    Prepare a cake tin with a diameter of 25 cm and line it with baking paper. You can grease its sides with coconut oil and sprinkle with coconut.

    Place the dough into the prepared cake tin.

    Put the tin with the dough into the oven and bake for about 45 minutes at 180 °C. At the end of baking, test with a skewer to see if the base is baked. If the skewer is still wet and has dough remnants, let the base bake a little longer.

    In the meantime, prepare the glaze: Peel the bananas, blend them, and mix with cocoa.

    Let the baked base cool and then spread it with the prepared glaze.
