INGREDIENTS
- 160 g whole grain spelt flour + 30 g for flouring the pan
- 80 g ground poppy seeds
- 5× eggs
- 2 tablespoons honey
- 100 ml oat milk, can be substituted with another
- 40 g coconut oil + 10 g for greasing the pan
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- A pinch of salt
INSTRUCTIONS
- 1Preheat the convection oven to 170°C.
- 2Mix the flour with poppy seeds and baking powder.
- 3In a bowl, whisk the eggs, honey, and oil, and mix everything with the flour, poppy seeds, and baking powder.
- 4Finally, incorporate the milk into the batter.
- 5Pour the batter into a greased and floured Bundt cake pan and bake in the preheated oven.
- 6Bake for 40-45 minutes at 160-170°C. Test the batter with a skewer. Insert the skewer into the cake, pull it out, and if the surface of the skewer is dry, the cake is baked. If the skewer is covered with batter, let the cake bake for a few more minutes.
- 7After baking, immediately turn the cake out and let it cool on a rack.
