INGREDIENTS
- 160 g whole-grain spelt plain flour + 30 g for dusting the pan
- 80 g ground poppy seeds
- 5 eggs
- 2 tablespoons honey
- 100 ml oat milk (can be substituted with another)
- 40 g coconut oil + 10 g for greasing the pan
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- Pinch of salt
INSTRUCTIONS
- 1Preheat the convection oven to 170°C.
- 2Mix the flour with poppy seeds and baking powder.
- 3In a bowl, whisk the eggs, honey, and oil, then mix everything into the flour with poppy seeds and baking powder.
- 4Finally, incorporate the milk into the batter.
- 5Pour the batter into a greased and floured bundt cake pan and bake in the preheated oven.
- 6Bake for 40-45 minutes at 160-170 °C. Test the batter with a skewer. Insert the skewer into the bundt cake, pull it out, and if the surface of the skewer is dry, the bundt cake is baked through. If the skewer has batter on it, let the bundt cake bake for a few more minutes.
- 7After baking, immediately turn out the bundt cake and let it cool on a wire rack.
