Sift both buckwheat and spelt flour into a large bowl. Then add eggs, milk, and a pinch of salt to the bowl and mix everything. Let the resulting dough rest for 10 minutes.
Meanwhile, prepare the apple filling: wash the apples, remove the cores, and cut them into cubes. Then, heat 2 tablespoons of butter in a non-stick pan, add the chopped apples, and sauté them for 5 minutes over medium heat. Afterward, turn off the heat source, add honey and cinnamon to the pan, and mix everything.
Now, prepare another non-stick pan, heat it dry, and get the rested dough ready. From the dough, gradually cook pancakes in the pan over medium heat (approx. 1 minute on each side). The dough should be enough for approximately 10 pancakes.
