INGREDIENTS FOR THE BATTER

  • 70 g fine buckwheat flour
  • 110 g whole grain spelt flour
  • 3 eggs
  • 500 ml semi-skimmed milk
  • Salt

INGREDIENTS FOR THE FILLING

  • 450 g apples
  • 2 tablespoons butter
  • 1 tablespoon honey
  • 2 teaspoons ground cinnamon

INSTRUCTIONS

    Sift the buckwheat and spelt flour into a large bowl. Then add the eggs, milk, and a pinch of salt to the bowl and mix everything together. Let the resulting batter rest for 10 minutes.

    In the meantime, prepare the apple filling: wash the apples, remove the cores, and cut them into cubes. Then, in a non-stick pan, melt 2 tablespoons of butter, add the chopped apples, and sauté them for 5 minutes over medium heat. Then turn off the heat source, add honey and cinnamon to the pan, and mix everything together.

    Now prepare another non-stick pan, heat it dry, and get the rested batter ready. Gradually cook pancakes from the batter in the pan over medium heat (about 1 minute on each side). The batter should be enough for approximately 10 pancakes.

    Fill the finished pancakes with the prepared apple mixture, roll them up, and serve.
