INGREDIENTS
- 2 bananas (+ 1 banana on top of the bread − optional)
- 60 g coconut oil (melted)
- 70 g honey
- 2 eggs
- 400 g whole grain spelt flour
- 1 teaspoon ground cinnamon
- 190 ml milk
- 2 teaspoons baking powder
- A pinch of salt

INSTRUCTIONS
- 1Preheat the oven to 175 °C. Mash the bananas in a large bowl with a fork, add melted coconut oil, honey (preferably liquid) and eggs. Whisk all the ingredients together. Add all the remaining ingredients to the bowl − spelt flour, cinnamon, milk, baking powder, and salt.
- 2Mix everything thoroughly and transfer the batter to a loaf pan lined with baking paper. Slice the remaining banana lengthwise, place it on top, and put the pan in the oven. Bake the bread at 165−175 °C for 40−45 minutes.
