INGREDIENTS
- 2 bananas (+ 1 banana for the top of the bread – optional)
- 60 g coconut oil (melted)
- 70 g honey
- 2 eggs
- 400 g wholemeal spelt flour
- 1 teaspoon ground cinnamon
- 190 ml milk
- 2 teaspoons baking powder
- Pinch of salt

INSTRUCTIONS
- 1Preheat the oven to 175 °C. Mash the bananas in a large bowl with a fork, add melted coconut oil, honey (preferably liquid), and eggs. Whisk all ingredients together. Add all remaining ingredients to the bowl – spelt flour, cinnamon, milk, baking powder, and salt.
- 2Mix everything thoroughly and transfer the dough to a loaf pan, which we first line with baking paper. Slice the remaining banana lengthwise, place it on top, and put the pan in the oven and bake the bread at 165−175 °C for 40−45 minutes.
