INGREDIENTS

  • 2 bananas (+ 1 banana for the top of the bread − optional)
  • 400 g wholemeal spelt flour
  • 60 g coconut oil (melted)
  • 70 g honey
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 190 ml milk
  • 2 teaspoons baking powder
  • Pinch of salt

INSTRUCTIONS

    Preheat the oven to 175 °C. Mash the bananas in a large bowl with a fork, add melted coconut oil, honey (preferably liquid) and eggs. Whisk all ingredients together. Add all remaining ingredients to the bowl − spelt flour, cinnamon, milk, baking powder and salt.

    Mix everything thoroughly and transfer the dough into a loaf pan, which we first line with baking paper. Cut the remaining banana lengthwise, place it on top, and put the pan into the oven and bake the bread at 165−175 °C for 40−45 minutes.
