INGREDIENTS

  • 2 bananas (+ 1 banana on top of the bread − optional)
  • 60 g coconut oil (melted)
  • 70 g honey
  • 2 eggs
  • 400 g whole grain spelt flour
  • 1 teaspoon ground cinnamon
  • 190 ml milk
  • 2 teaspoons baking powder
  • A pinch of salt

INSTRUCTIONS

    Preheat the oven to 175 °C. Mash the bananas in a large bowl with a fork, add melted coconut oil, honey (preferably liquid) and eggs. Whisk all the ingredients together. Add all the remaining ingredients to the bowl − spelt flour, cinnamon, milk, baking powder, and salt.

    Mix everything thoroughly and transfer the batter to a loaf pan lined with baking paper. Slice the remaining banana lengthwise, place it on top, and put the pan in the oven. Bake the bread at 165−175 °C for 40−45 minutes.
