- 250 g butter (room temperature)
- 250 g low-fat quark
- 250 g wholemeal spelt plain flour
- 150 g plum jam
- 1 egg (beaten)

INSTRUCTIONS
- 1Cut the butter into cubes in a large bowl. Add low-fat quark and spelt flour and work everything together into a smooth dough. For easier preparation, use a mixer with a larger chopper.
- 2Place the resulting dough in the refrigerator for about 15 minutes. Meanwhile, preheat the oven to 170 °C and line a baking sheet with parchment paper.
- 3Transfer the chilled dough from the refrigerator to a work surface and roll it out into a sheet about 2 mm thick. Cut the dough sheet into squares (4 cm × 4 cm) and add a tablespoon of plum jam to each square. Join the opposite corners of each square and fold to form a pocket.
- 4Then spread all the pockets on the prepared baking sheet, brush with beaten egg, and bake in the preheated oven for 15 minutes at 170–180 °C.
- 5Let the baked pockets cool for a while, then serve.
Tip
Instead of plum jam, you can use marmalade.
