FLAVORED BROTH PROCEDURE
Put the ingredients for the broth into a pot, bring to a boil, skim off the foam, and cook uncovered over low heat for 15 minutes. Then remove from heat and let stand for 20 minutes.
Remove the meat from the pot and slice it 1 cm thick. Strain the finished broth through a fine sieve into a clean pot.
FOR FINISHING
Slice the ginger thinly, finely chop the coriander (including stems) and spring onion. Slice the chili pepper thinly.
Chef's tip
You can freeze the remaining flavored broth or prepare more soup. However, you will then need to increase the amount of lime juice, sugar, and fish sauce so that the soup has a balanced sweet and sour taste with a balanced salty finish. You can add 2 pieces of cut lemongrass and 8 kaffir lime leaves to the flavored broth. Instead of brown sugar, you can use palm sugar, which has a very characteristic taste. You can add or reduce fresh chili to taste. For the last 3 minutes of cooking, you can add small fresh mushrooms cut into quarters or oyster mushrooms torn into smaller pieces to the soup.
