- 200 g all-purpose flour
- 400 g Gouda cheese
- 100 g chilled butter
- 100 g crème fraîche or sour cream (16%)
- large pinch of salt
- 100 g whipping cream (33%)
- 4 fresh porcini mushrooms
- 3 eggs
- 3 tablespoons ajvar
- white pepper
Instructions
- 1Let 1 ice cube melt partially in a glass. Mix the flour with salt, add butter cut into smaller pieces and two tablespoons of ice water (you can also chop the ice in a food processor and add two tablespoons of crushed ice). Quickly work into a firm dough so that the butter does not melt too much. Roll out the dough and line a ∅ 24 cm tart pan, preferably with a removable bottom, as the dough is very delicate.
- 2Grate the cheese on a coarse grater. Spread ajvar evenly over the prepared dough in the pan. Then spread the grated cheese evenly over the ajvar. Slice the porcini mushrooms thinly and arrange them on top.
- 3In a bowl, briefly whisk together the sour cream with the sweet cream and eggs. Season the mixture with salt and pepper to taste and pour it over the prepared quiche.
- 4Bake for 35 minutes in an oven preheated to 175°C with a fan. The quiche can be served immediately after removing from the oven or chilled.
