INGREDIENTS

  • 200 g whole wheat spelt flour (+ 10 g for dusting)
  • 80 g butter (melted)
  • 600 g of any whole apples
  • 2 teaspoons ground cinnamon
  • 2 tablespoons brown sugar
  • 20 g vanilla pudding powder
  • 30 g raisins
  • 2 eggs size M
  • 100 g white yogurt (3.5% fat)

INSTRUCTIONS

    First, preheat the oven to 185–190 °C, prepare a baking sheet (30 cm × 40 cm) and line it with baking paper.

    In a larger bowl, place the flour, 1 egg, butter, and yogurt. Work into a smooth, firm dough and let it rest for at least 10 minutes at room temperature.

    Meanwhile, peel the apples, remove the cores, and grate them coarsely into a larger bowl. Add cinnamon, sugar, pudding, and raisins to the apples and mix everything together.

    Flour your work surface and transfer the rested dough onto it, roll it out to a thickness of 1 cm, and spread the apple mixture on one side. Fold the sides of the dough inward to prevent the apples from falling out, then wrap it into the shape of a strudel.

    Transfer the prepared strudel onto the baking paper. In a smaller bowl, beat the remaining egg and brush the entire strudel with it. Place the baking sheet in the preheated oven and bake for 30–35 minutes at 185–190 °C. After baking, remove from the oven and let cool for at least 1 hour. Then cut the strudel into desired portions and serve.
