INGREDIENTS

  • 200 g whole-grain spelt plain flour (+ 10 g for dusting)
  • 80 g butter (melted)
  • 600 g any whole apples
  • 2 teaspoons ground cinnamon
  • 2 tablespoons cane sugar
  • 20 g vanilla pudding powder
  • 30 g raisins
  • 2 medium-sized eggs
  • 100 g plain yogurt (3.5 % fat)

INSTRUCTIONS

    First, preheat the oven to 185–190 °C, prepare a baking sheet (30 cm × 40 cm) and line it with baking paper.

    In a large bowl, place the flour, 1 egg, butter, and yogurt. Knead into a smooth, firm dough and let it rest for at least 10 minutes at room temperature.

    Meanwhile, peel the apples, remove the cores, and coarsely grate them into a large bowl. Then add cinnamon, sugar, pudding powder, and raisins to the apples and mix everything.

    Flour your work surface, transfer the rested dough onto it, roll it out to a thickness of 1 cm, and spread the apple mixture onto one side. Then fold the sides of the dough inwards to prevent the apples from falling out, and then roll it into a strudel shape.

    Transfer the prepared strudel onto the baking paper. In a small bowl, whisk the remaining egg and brush it over the entire strudel. Then place the baking sheet into the preheated oven and bake for 30–35 minutes at 185–190 °C. After baking, remove from the oven and let cool for at least 1 hour. Then cut the strudel into desired portions and serve.
