INGREDIENTS
- 100 g egg whites (can be frozen)
- 200 g granulated sugar
- 50 g dark chocolate (preferably 70%)
INSTRUCTIONS
- 1Place the egg whites and sugar in a glass or metal bowl, set it over a water bath, and heat the mixture over low heat, stirring constantly until the sugar dissolves. Remove the bowl from the water bath and beat the egg whites for 10 minutes. A firm and glossy meringue will form.
- 2While beating the egg whites, melt the chocolate in a water bath and let it cool slightly.
- 3Fill a piping bag with a decorating tip (I used Wilton 1M) with the meringue and pour the melted chocolate on one side of the bag. Pipe larger meringues onto a baking sheet lined with parchment paper, leaving small gaps between them.
- 4Bake for 90 minutes in an oven preheated to 120°C without a fan. After baking, let them cool on the baking sheet and carefully peel them off the parchment paper.
