INGREDIENTS FOR THE BATTER

  • 400 ml kefir milk
  • 80 ml sunflower oil
  • 1 egg
  • 350 g semi-coarse flour
  • 100 g brown sugar
  • 50 g honey
  • 10 g cocoa
  • 1 packet of baking powder

INGREDIENTS FOR DECORATION

  • 50 g white chocolate
  • 50 g dark chocolate
  • Curd in a tub or skyr

INGREDIENTS FOR SUGAR ICING

  • 150 g powdered sugar
  • 1 egg white
  • Food coloring

INSTRUCTIONS

    Preheat the oven to 180 °C. Prepare a baking tray measuring 28 x 18 cm.

    Grease the baking tray with butter and dust with semi-coarse flour.

    Now prepare the batter. Mix the flour with the baking powder and cocoa, then sift them into a bowl. Add the sugar and mix again. Then crack the egg, pour in the kefir milk, oil, and honey, and whisk to create a compact but liquid batter. Pour it into the baking tray and spread it evenly across the bottom.

    Bake the cake in the oven preheated to 180 °C for about 30 – 35 minutes. Once done, let it cool completely.

    Melt both chocolates in a water bath. Each separately, do not mix them. Mentally divide the cooled cake into three equal strips side by side. Spread one with white chocolate, the second with dark chocolate, and leave the third uncoated.

    Before the chocolate hardens, prepare the decoration. Prepare the sugar icing by carefully whipping the egg white with sifted powdered sugar (whip for up to 10 minutes). Then color it as needed (red and leave some white) and transfer it to a piping bag with a small hole. Mix the curd and also transfer it to a piping bag, this time with a larger hole about 1 cm wide.

    Cut the cake into regular squares and decorate as St. Nicholas, angels, and devils. Prepare beards for St. Nicholas from curd. Use sugar icing for the eyes and hat. For pupils, you can use dark chocolate or black icing. The wings of the angels are also made from curd, the rest from sugar icing. For the devil, use black sugar icing for hair, and decorate the tongue and horns with red icing. Then prepare the eyes the same way as for the previous figures.
