INGREDIENTS FOR THE BATTER

  • 400 ml kefir milk
  • 80 ml sunflower oil
  • 1 egg
  • 350 g semi-coarse flour
  • 100 g cane sugar
  • 50 g honey
  • 10 g cocoa
  • 1 sachet baking powder

INGREDIENTS FOR DECORATION

  • 50 g white chocolate
  • 50 g dark chocolate
  • Quark in a tub or skyr

INGREDIENTS FOR THE SUGAR ICING

  • 150 g powdered sugar
  • 1 egg white
  • Food coloring

  • Butter for greasing the baking dish

INSTRUCTIONS

    Preheat the oven to 180 °C. Prepare a baking dish measuring 28 x 18 cm.

    Grease the baking dish with butter and dust with semi-coarse flour.

    Now, prepare the batter. Mix the flour with baking powder and cocoa, then sift them into a bowl. Add sugar and mix again. Next, crack in the egg, pour in the kefir milk, oil, and honey, and whisk until a compact but liquid batter forms. Pour this into the baking dish and spread it evenly over the entire bottom.

    Bake the cake in the preheated oven at 180 °C for approximately 30 – 35 minutes. Once done, let it cool completely.

    Melt both chocolates in a bain-marie (water bath). Each separately, do not mix them. Mentally divide the cooled cake into three equal strips side by side. Spread one with white chocolate, the second with dark chocolate, and leave the third unspread.

    Before the chocolate sets, prepare the decoration. Prepare the sugar icing by carefully whisking the egg white with sifted powdered sugar (whisk for up to 10 minutes). Then, color it as needed (red and leave a part white) and transfer it to a piping bag, making a small hole. Mix the quark and also transfer it to a piping bag, but this time with a larger, approximately 1 cm hole.

    Cut the cake into regular squares and decorate them as St. Nicholas, angels, and devils. For St. Nicholas, make beards from quark. Then use sugar icing for the eyes and hat. For the pupils, you can use dark chocolate or black icing. Angel wings are also made from quark, the rest from sugar icing. For the devil, use black sugar icing for the fur, and red icing to decorate the tongue and horns. Then simply prepare the eyes as with the previous figures.
