INGREDIENTS FOR THE DOUGH
- 220 g whole grain spelt flour
- 1 egg
- 60 g finely ground walnuts
- 100 g honey
- 60 g butter
- 1 teaspoon gingerbread spice
- ½ teaspoon baking soda

- 200 g dates
- 100 ml condensed milk
- Ground walnuts

INSTRUCTIONS
- 1Prepare the dough a day in advance. On a board, mix the dry ingredients, make a well, and add the egg, honey, and butter. Work everything into a compact dough with your hands, wrap it in cling film, and place it in the fridge overnight. If you don't have that much time, let it rest for at least 1 hour.
- 2Preheat the oven to 170 °C. Roll out the dough to a thickness of 5 millimeters, transfer it to a baking sheet lined with baking paper, and bake for 12-13 minutes.
- 3Soak the dates for 1 hour. Then drain the water and blend the dates into a paste.
- 4Crumble the cooled sheet with your hands or using a mixer. Set aside approximately 3 tablespoons and mix with ground nuts. This will create a mixture for coating the balls. Mix the rest with the date paste and condensed milk. Form balls with a diameter of 2.5 cm from the resulting mass and coat them in the prepared coating mixture.
