INGREDIENTS

  • 500 g mixed minced meat
  • handful of mien glass noodles
  • handful of mushrooms – wood ear mushroom
  • handful of mung bean sprouts
  • 1 onion
  • handful of chopped fresh coriander
  • handful of julienned carrots
  • 1 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 teaspoons sugar
  • pinch of pepper
  • 1 chili pepper
  • Rice paper

SAUCE

  • 2 tablespoons fish sauce
  • 2 tablespoons brown cane sugar
  • ½ fresh chili
  • 2 cloves garlic
  • 2 tablespoons lime juice or rice vinegar

INSTRUCTIONS

    Soak the glass noodles in warm water for 5 - 10 minutes to soften. Pour boiling water over the wood ear mushrooms and let them sit for 5 minutes.

    In a bowl, mix all ingredients (minced meat, chopped glass noodles, wood ear mushrooms cut into strips, mung bean sprouts, chopped onion, chopped coriander, grated carrot, and bind everything with an egg). Add fish sauce, soy sauce, sugar, and season with pepper.

    Prepare a plate with water to moisten the rice paper. Roll the prepared mixture into the rice paper. Then fry the rolls in oil until crispy.

    Serve with fish sauce, which is mixed from the listed ingredients, to which 4 tablespoons of water are added.
