INGREDIENTS

  • 500 g mix of minced meat
  • a handful of glass noodles mien
  • a handful of mushrooms – wood ear mushrooms
  • a handful of mung bean sprouts
  • 1 onion
  • a handful of chopped fresh coriander
  • a handful of carrot julienne strips
  • 1 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 teaspoons sugar
  • a pinch of pepper
  • 1 chili pepper
  • Rice paper

SAUCE

  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • ½ fresh chili
  • 2 cloves of garlic
  • 2 tablespoons lime juice or rice vinegar

INSTRUCTIONS

    Soak the glass noodles in warm water for 5 - 10 minutes to soften. Pour boiling water over the wood ear mushrooms and let them sit for about 5 minutes.

    In a bowl, mix all the ingredients (minced meat, chopped glass noodles, sliced wood ear mushrooms, mung bean sprouts, chopped onion, chopped coriander, grated carrot, and bind everything with an egg). Add fish sauce, soy sauce, sugar, and pepper.

    Prepare a plate with water to moisten the rice paper. Roll the prepared mixture into the rice paper. Fry the rolls in oil until crispy.

    Serve with fish sauce, which is mixed from the listed ingredients, adding 4 tablespoons of water.
