Cut the mango, carrot, and cucumber into thin strips. Place mung bean sprouts, chopped perilla, mint, and cilantro into a bowl.

Sauté the shrimp with garlic and ginger, season with fish sauce, salt, and pepper.

Mix the salad thoroughly and pour over the dressing, which you prepare by mixing all ingredients and adding 2 tablespoons of water. Season the salad with salt and pepper. Serve the shrimp on top of the salad.
