- 200 g highest quality pork ham
- 250 ml whipping cream 33%
- 10 g whipping cream stabilizer Smetana-fix
- 2 tablespoons lime juice
- 3 tablespoons chopped sun-dried tomatoes in oil
- 3 tablespoons chopped fresh chives
- 1 English cucumber
- Fresh horseradish
- Pink Himalayan salt
- White pepper
- Toast bread
Take the cream out of the fridge and let it come to room temperature. Mix with the whipping cream stabilizer and whip at high speed until the cream is stiff. Gently fold in the chopped tomatoes, chives, and lime juice. Clean the horseradish and grate it finely. I recommend 2-3 tablespoons. Also fold the horseradish into the mousse and season with salt and pepper.
Spread a thin layer of the seasoned mousse onto each slice of ham and roll up. Alternatively, you can roll the ham into a hollow tube and fill it using a piping bag. Use a potato peeler to slice 6 thin strips from the cucumber and wrap each roll.
Chill in the fridge and serve with toasted bread.
