INGREDIENTS

  • 200 g smooth buckwheat flour
  • 80 g powdered brown cane sugar
  • 80 g butter
  • 2 eggs
  • 60 g 70% chocolate
  • 20 g Dutch cocoa
  • Pecans

  • Baking paper
  • Cling film

INSTRUCTIONS

    Take the butter and eggs out of the fridge an hour in advance.

    Melt the chocolate in a water bath and let it cool so it is not hot but remains liquid. Sift 180 g of flour into a bowl, add sugar, softened butter, eggs, cocoa, and melted chocolate. Mix until all ingredients are combined. Transfer to a board, sprinkle with 20 g of flour, and knead the dough by hand. Wrap the dough in cling film and let it rest in the fridge for 1 hour.

    Take 15 g pieces of dough and form balls, placing them on a baking sheet lined with parchment paper. Place a pecan on each ball and gently press down.

    Preheat the oven to 160 °C. Bake the buns for approximately 15 minutes.
