INGREDIENTS

  • 200 g whole grain spelt flour
  • 20 g cocoa
  • 1 egg + 1 egg yolk
  • 60 g finely ground walnuts
  • 100 g honey
  • 60 g butter
  • 1 teaspoon gingerbread spice
  • ½ teaspoon baking soda

YOU WILL ALSO NEED

  • Parchment paper
  • Cling film

INSTRUCTIONS

    Prepare the dough a day in advance. On a work surface, mix the dry ingredients, make a well, and add the egg, honey, and butter. Work everything into a compact dough with your hands. Shape the dough into a roll and wrap it in cling film. Store in the refrigerator overnight. If you don't have that much time, let it rest for at least 1 hour.

    Preheat the oven to 170°C. Roll out the dough to a thickness of 4 millimeters.

    Cut out various shapes, transfer them to a baking sheet lined with parchment paper, and bake for 10-12 minutes.

    After removing from the oven, brush the hot gingerbread cookies with beaten egg yolk for shine.
