INGREDIENTS
- 200 g whole grain spelt flour
- 20 g cocoa
- 1 egg + 1 egg yolk
- 60 g finely ground walnuts
- 100 g honey
- 60 g butter
- 1 teaspoon gingerbread spice
- ½ teaspoon baking soda
YOU WILL ALSO NEED

- Cling film
INSTRUCTIONS
- 1Prepare the dough a day in advance. On a work surface, mix the dry ingredients, make a well, and add the egg, honey, and butter. Work everything into a compact dough with your hands. Shape the dough into a roll and wrap it in cling film. Store in the refrigerator overnight. If you don't have that much time, let it rest for at least 1 hour.
- 2Preheat the oven to 170°C. Roll out the dough to a thickness of 4 millimeters.
- 3Cut out various shapes, transfer them to a baking sheet lined with parchment paper, and bake for 10-12 minutes.
- 4After removing from the oven, brush the hot gingerbread cookies with beaten egg yolk for shine.
