INGREDIENTS

  • 50 g fine buckwheat flour
  • 130 g whole grain spelt flour
  • 500 ml semi-skimmed milk
  • 30 g butter (melted)
  • 4 eggs size M
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon zest
  • 300 g soft semi-skimmed quark
  • 1 teaspoon vanilla extract
  • 80 g raisins
  • 1 egg yolk
  • 4 tablespoons honey

    In a large bowl, place both flours, milk, melted butter, eggs, baking soda, ground cinnamon, and lemon zest, and use a whisk to make a thin batter.

    Heat a non-stick pan (Ø 27 cm) over high heat. Once the pan is hot, reduce the heat to low and pour in the batter. Cook the resulting pancake on both sides without oil for 1–2 minutes. Set the cooked pancakes aside and continue until all the batter is used.

    Once all the batter is used, preheat the oven to 220–225 °C and prepare a larger baking dish (20 cm × 30 cm).

    Meanwhile, in a smaller bowl, mix the quark, vanilla extract, raisins, egg yolk, and 2 tablespoons of honey and mix thoroughly. Fill the finished pancakes with the quark filling, then roll them up and place them side by side in the prepared baking dish.

    Finally, drizzle the pancakes with the remaining honey and bake in the oven for 12–13 minutes at 220–225 °C.

    Remove the baked pancakes from the oven and serve.
Tip
Serve the pancakes with fresh berries – try raspberries, blueberries, or strawberries. They are also excellent with fruit sauce or apple puree with cinnamon.
