Preparation method
In a large bowl, combine both flours, milk, melted butter, eggs, baking soda, ground cinnamon, and lemon zest, and whisk into a thin batter.
Heat a non-stick pan (Ø 27 cm) over high heat. Once the pan is hot, reduce the heat to medium and pour in the batter. Cook the pancake dry on both sides for 1–2 minutes. Set aside the cooked pancakes and continue until all the batter is used.
Once all the batter is used, preheat your oven to 220–225 °C and prepare a larger baking dish (20 cm × 30 cm).
Chef's tip
Serve the pancakes with fresh small fruits – try raspberries, blueberries, or strawberries, for example. They are also excellent with fruit sauce or apple puree with cinnamon.
