  • 380 g wholemeal spelt flour
  • 1 teaspoon baking powder
  • 3 tablespoons Dutch cocoa
  • 10 g xylitol (can be replaced with cane sugar)
  • 60 g butter (melted)
  • 4 eggs size M
  • 400 ml semi-skimmed milk
  • 500 g semi-skimmed curd
  • 1 tablespoon vanilla extract
  • 3 tablespoons honey

INSTRUCTIONS

    First, preheat the oven to 175–180 °C, prepare a baking dish (25 cm × 25 cm) and line it with baking paper.

    Then prepare 2 bowls. In a larger bowl, mix spelt flour with baking powder, cocoa, and xylitol. Add melted butter, 3 eggs, and 300 ml of milk. Work the mixture into a smooth batter and pour it into the prepared baking dish.

    In the second bowl, mix the curd, remaining egg, vanilla extract, remaining 100 ml of milk, and honey. Spoon the curd mixture irregularly over the batter in the baking dish and then lightly swirl it with the cocoa batter using the end of a spoon to create a marbled effect.

    Finally, place the baking dish in the preheated oven and bake for 35–40 minutes at 175–180 °C.

    Remove the baked cheesecake brownies from the baking dish, let them cool for 30 minutes, then cut and serve.
