INGREDIENTS
- 6 eggs
- 220 g granulated sugar
- 250 g semi-coarse flour
- 50 g grated coconut + for dusting the pan
- 50 g coarsely ground blanched almonds
- 1 teaspoon baking powder
- 200 ml coconut milk
- A pinch of salt
- Sunflower oil
- Powdered sugar
INSTRUCTIONS
- 1Grease the bundt cake pan with oil and dust with grated coconut.
- 2Mix the flour with coconut, almonds, and baking powder. Separate the eggs into whites and yolks. Add a pinch of salt to the whites and beat them into stiff peaks, gradually whisking in the granulated sugar by spoonfuls, followed by the yolks one at a time.
- 3Finally, gently fold the coconut milk and dry ingredients into the batter. Pour the batter into the pan and bake for 45 minutes in an oven preheated to 175°C. To check if the cake is done, insert a skewer into the cake; if it comes out clean, the cake is baked.
- 4Let the cake cool in the pan on a rack for 10 minutes, then carefully turn it out onto the rack and let it cool completely.
- 5Dust with powdered sugar before serving.
