INGREDIENTS

  • 25 g butter
  • 1 onion (60 g)
  • 2 cloves garlic
  • 50 g all-purpose wheat flour
  • 850 ml chicken broth
  • 150 g cheddar
  • 1 package fresh broccoli (500 g)
  • 100 g fresh spinach
  • 250 g cooking cream 15-16 %
  • Pepper
  • Salt
  • 500 ml whole milk

INSTRUCTIONS

    Peel and finely chop the onion and garlic. Wash the broccoli, cut off the florets and clean the stem. Rinse the spinach and finely grate the cheddar.

    In a pot, melt the butter and sauté the onion with garlic. Then add the flour and cook it in.

    Now pour in the broth and milk and the broccoli stems and let simmer for 10 minutes, stirring occasionally.

    Remove the stems, add the broccoli florets and cheddar, and simmer again.

    Finally, add the spinach and cream, simmer for another 5 minutes, and blend everything until smooth.

    Season with salt and pepper to taste.

    Serve with croutons and grated cheddar.
